Favorite restaurant: there are many favorite restaurants. Those of us who are dedicated to the restaurant business, do usually enjoy it very much on those occasions when we escape to visit others
José, Via Veneto is one of the most enduring restaurants in Barcelona. Congratulations for that in the first place! Tell me, how would you define the type of cuisine you offer, how many years has Via Veneto been open, and what are the main differential characteristics of your restaurant?
What would you say is the main difference between your current customers and the ones from 10/20 years ago (if any)?
In what ways would you say your menu/ cuisine has evolved over time, how many dishes are offered today in your menu, and are there still some courses on the menu which are at least 15 years old?
How many times a year do you make any relevant change to the menu?
In Barcelona, what would you say is the most culinary pronounced trend at present times in general, and in relation to restaurants of your type of cuisine?
